1 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 cups eggs
2 tsp vanilla
1 cups flour
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
6 cups oat flakes
1 cup walnuts chopped
1 cup coconut flakes
1 cup raisins
Cream shortening and sugars.
Blend in eggs and vanilla.
Sift flour, salt, and soda
Mix in the rest of ingredients.
Fold dry ingredients into creamed mixture
Roll into small balls and place on greased cookie sheet
Flatten with fork
Bake at 350 for 10 - 12 minutes or until golden.
NOTES : If the cookies don't flatten out, reduce the oven temperature by 25.
You should be able to get about 12 cookies per sheet.
I use a spoon and a fork to measure the dough and flatten on the sheet.
